Ingredients and Preparation

Maangchi introduces Dwaeji-Kimchi Duruchigi, explaining that "duruchigi" means stir-fried with this and that. She plans to add vegetables and mushrooms to the dish, making it ideal for a party. The main ingredient is samgyeopsal, or pork belly, which she says has better flavour when stir-fried with kimchi. About one pound of pork belly is prepared by cleaning and cutting it.

Initial Stir-Frying of Pork

Maangchi heats a pan and adds the pork belly to it. To enhance the flavour, she adds a little sesame oil and some salt. The pork is stirred over medium heat to ensure it cooks evenly without burning.

Kimchi Preparation

While the pork is cooking, Maangchi prepares one pound of well-fermented kimchi. She chops the kimchi thinly. After the pork has cooked for about five to six minutes, absorbing the sesame oil and salt, the chopped kimchi is added to the pan.

Adding Kimchi and Making the Seasoning Paste

The kimchi is added to the pork and allowed to cook. Maangchi then prepares the seasoning paste, combining two tablespoons of hot pepper paste (gochujang), one tablespoon of soy sauce, two tablespoons of hot pepper flakes (gochugaru), and about two tablespoons of water. She adds two tablespoons of rice syrup (jocheong) for a touch of sweetness, noting that it can be skipped for those avoiding sweeteners. Four garlic cloves are minced and added to the mixture.

Adding Vegetables and Simmering

A large green onion (dae-pa) is cut diagonally and added to the pan, along with a medium-sized onion and a small carrot. The kimchi and vegetables are cooked together for about six to seven minutes over medium heat, with constant stirring. The seasoning paste is then added, along with one and a half cups of water. Maangchi explains that this dish is often served boiling on the table in Korean restaurants with various side dishes. The mixture is covered and cooked for 10 minutes.

Adding Mushrooms and Final Touches

Maangchi prepares Enoki mushrooms (paengi-buseot), cutting off the bottom part and washing them. After 10 minutes, she checks the dish, noting it smells spicy. The mushrooms are added, along with about half a teaspoon of ground black pepper. The heat is turned off, and sesame oil is added as a final touch.

Serving and Enjoying the Dish

Maangchi suggests that this dish is perfect for a Korean food party and demonstrates how to serve it with various side dishes prepared in advance. She adds rice and a fried egg to the plate, along with the stir-fried pork and kimchi. She recommends using a large spoon for sharing. She also shows how to eat it with Napa cabbage, cooked radish (mu-namul), spicy cucumber, steamed eggplant, soybean sprouts (kongnamul-muchim), and semi-dried salted fish. Maangchi encourages viewers to make the recipe and enjoy a Korean food party with family and friends.

0:00 (bright music) - Today, let's make something spicy using pork and kimchi, well fermented kimchi. This is stir fried pork and kimchi. In Korean, dwaeji-kimchi duruchigi. Duruchigi means stir fried with this and that. So today I'm going to add some vegetables and mushroom, this is going to be a really perfect dish for a party. Make a Korean food party with friends and family. So this is samgyeopsal, pork belly. Kind of a little fat here. When stir fried together with kimchi much better flavor, and clean this way and cut around one pound pork belly.

0:54 So let's heat up. I'm going to use this pan from beginning to the end. Easy. (water flowing) (pork sizzling) So to give some flavor, I'll just add a little bit sesame oil (pork sizzling) and some salt. (pork sizzling) Keep stirring over medium heat, not too high. Meanwhile, we gonna use kimchi. So let's see kimchi. One pound of kimchi.

1:42 This is exactly one pound. (pork sizzling) So medium heat and chop this kimchi. I usually chop this kimchi very thinly. No time to wash my hand. Okay. Now, around five and six minutes I cooked. So this pork is very absorbed with some sesame oil flavor and a little bit of salt.

2:28 Of course, this is still too bland. We gotta add seasoning paste soon, and then kimchi. (pork and kimchi sizzling) Let's wash. (water flowing) Smells really good. If you use chicken breast, you gotta add some cooking oil. Cooking oil around one tablespoon so that you can stir fry more easily. Okay, once kimchi is inside, it's not going to be burned

3:15 so let it cook. And then I'm going to make the seasoning paste. Two tablespoons hot pepper paste, and one tablespoon soy sauce, two tablespoons gochugaru, hot pepper flakes, and about two tablespoons just water. Jocheong, rice syrup, about two tablespoons. If you don't want to eat any kind of sweetener just skip it, but a little bit sweetness, add it, and then make it kind of more tasty. Keep stirring. (dish sizzling)

4:01 Then four garlic cloves. I'm doing again, keep stirring. So mix. Look at that. This sauce is nice and delicious. Sweet, salty, and very flavorful garlicky. This is a large green onion, dae-pa, and I'm going to use one large dae-pa, but you guys can use four green onions. Cut diagonally. And add this here and onion.

4:49 Onion is around like a medium sized one onion will be good. Like a big chunk. Small carrot. Now I just cooked this kimchi together around six to seven minutes over medium heat. I just kept stirring, and then I'm going to add this and this paste.

5:37 Then we need to add some water here. One and a half cup. One. One and a half cup. See compared to kimchi stew, this water is not much water and also it's going to be evaporated. When you go to a Korean restaurant they are going to bring this way and just boiling on the table with other side dishes, and then that's the way that you guys can eat. I'm going to cover this and cook 10 minutes. This time I use this mushroom. Paengi-buseot in Korean, in English Enoki mushroom. You know, but you guys can use any type of mushrooms or just skip it if you are not a big fan of mushroom.

6:23 Just when you get this, the bottom part is not good, so I'm going to cut off. This part throw away, and then I'm going to wash it. (water flowing) So mushroom is here waiting. You see? Just now bubbling. Oh wow. Nicely cooked. (dish simmering) Smells so good and spicy, okay. (pan clanking)

7:13 (egg sizzling) (dish simmering) And add mushrooms and ground black pepper around half a teaspoon. I will turn off the heat. Last touch, sesame oil. Turn off. If you want to have a Korean food party

8:00 and I'm going to show you. Here you go. I'm ready to have a party, one person party. You can share this with four people, four servings. I prepared all these small side dishes in the morning before filming this to show you how it goes well together. Look at this. Rice, yes, and this egg. Then I'm going to just add a little bit rice like this. For this, you can just prepare large large spoon so that all you guys can scoop together. Pork,

8:47 and mix. Mm. This is Napa cabbage. Mixed rice, you can put this in here and together, just you don't need Ssamjang because it's salty enough, and eat. Hmm. This is radish, cooked radish, mu-namul. Mm. Spicy cucumber. Steamed eggplant. Mm. This is soybean sprouts, kongnamul-muchim.

9:32 This a semi dried fish and salted. If you prepare this, somebody in your family members has to split this and debone so that everybody can enjoy. This is a yummy, yummy. Delicious. Can you see? Are you ready to have a Korean food party with your family and friends? Make this recipe, spicy stir fried pork and kimchi, dwaeji-kimchi duruchigi Let's do duru-chigi. (chuckles) Enjoy my recipe. See you next time. Bye. (bright music)
